Salad and Tuna Melt
Since we cannot leave a simple idea alone, we decided to have hearty salads and a tuna melt.
Since my hubby had already mixed up the tuna mixture, I was able to just skip to the salad building and tuna melt making.
Salad: lettuce in bowl. Cut rest of ingredients into bite size pieces. Top lettuce. Then, add salad dressing. For mine, I poured a small amount of olive oil across the top of the salad, then, drizzled a small amount of lemon juice across, then finished with a liberal amount of ranch dressing. As I pulled the pieces out of the bowl, the three mixed together. It was amazing. For my hubby's salad, he simply squirted best western dressing on his. A small amount of fresh ground pepper, and onward to our first bites.
The tuna melt was created with first toasting the bread. Initially I thought we were making open face sandwiches, but then, at presentation, discovered that he wanted a cover, so I ended up making toast for the cover.
Toast. Rub with french onion butter, place tuna mixture on. Place cheese slices across tuna. Place in pizza baker for approximately 5 minutes, enough to melt the cheese. Watch bread so it doesn't burn.
Open Face - No Cover or Covered
Salad
Once again, the ingredients are assembled and sliced in bite size pieces.
The options, in our refrigerator, for a hearty salad, also include sliced hard boiled eggs, pickled fish, pickled onions, carrot sticks and green or black olives. I did not include any of these on todays salad, but, perhaps next time.
As someone pointed out, a normal salad is plain lettuce. Adding all the ingredients to our salad, makes an additional meal. Smile.
A Simple Salad Dressing
Three ingredients:
Olive oil, drizzled across top of lettuce.
Lemon juice, also drizzled across lettuce.
Ranch dressing, squirted on top of lettuce.
