Its All In The Lemon

One large lemon will yield up 2-3 tablespoons of juice and 2 Teaspoons of Zest. Lemons can be stored for about a week at room tempature. For longer storage place in a sealed plastic bag in the refrigerator for up to two weeks.

Here is one of the most sought after recipes in the world. This is my own version that I have made for people over the years and there's hardly a week that goes by that someone doesn't write or email wanting this recipe so here is my version. We made this cake at several Florida Restaurants and sold it for $7 a slice. Yes it is that good of a cake. And yes it really was the favorite cake of Confederate Civil War General Robert E Lee.

You will need for your recipe.

2 Cups Of Sifted Cake Flour

1 1/2 Teaspoons Of Baking Powder

1/2 Teaspoon of Cream of Tartar

10 Eggs Separated

2 Cups of Sugar

1/2 Cup Of Vegetable Oil

2 Tablespoons Grated Lemon Rind

2 Tablespoons Lemon Juice

Pinch Of Salt

Orange Lemon Frosting

Combine first three ingredients and sift together 6 times. And set aside

Combine Egg Yolks and Sugar in a large mixing bowl and beat at high speed with an electric mixer until thick and lemon colored. Reduce speed to medium and gradually add in vegetable oil. Add flour mixture and mix until well blended. Stir in the lemon rind and juice.

Beat egg whites and salt until stiff peaks form. Fold into your batter. Pour your batter into 4 wax paper lined and greased 8-inch round cake pans.The new baking paper that has parchment paper on one side and tinfoil on the other side is the best baking paper to use when baking cakes. You can find this new baking paper in most supermarkets. Give it a try to see what you think.

Bake at 325 degrees for 20-25 minutes or until cake springs back when lightly touched. Cool in pans 10 minutes. Loosen your cake from the sides of the pan with a knife. Remove cake layers from pans and peel off wax paper. Cool your layers completely.

Orange Lemon Frosting

1/2 Cup Of Butter Softened

2 Tablespoons Sour Cream

2 16 Oz. Packages Powdered Sugar

1/4 Cup Grated Orange Peel

2 Tablespoons Grated Lemon Peel

2 Tablespoons Fresh Lemon Juice

6 Tablespoons Orange Juice

Beat the above ingredients together very well with a hand mixer. Make sure to get it mixed very well. Spread a thin layer of icing between each layer and use the bulk of the icing to cover the cake. This cake is so much better if you will make it and refrigerate for 3 days before you cut it. And yes it really is worth the wait.

You can make this cake round like in the photo or you can make it in a round pound cake pan with a hole in the center or in a loaf pan or loaf pans. Any way you make this cake it is delicious. And tastes the same. I've seen this cake made as a pound cake and it always turns out wonderful.

Be sure that you sift your cake flour that you use in this cake. If you do the cake will turn out just perfect. And if your going to be doing a lot of baking first of all be sure that your oven is level. Most stoves have screw in and out legs on the stove bottoms to be sure that you can make sure your stove is level.

If your going to be doing baking you should make sure that you have a heavy duty oven thermometer in your oven because quite of the temperature shown on the dial will sometimes be way off with the temperature actually produced in the oven.

If your going to be baking often you should buy yourself a stand mixer with the various attachments to use when your mixing up cakes and other baked items.

When you make your lemon and orange zest be sure that you grate the zest very fine for the best taste in your cake. When I'm making a cake like this I use only the best ingredients possible when I make and bake my cakes. When I'm making a cake that I want other people to enjoy I only use the best of ingredients in my cakes. And you should to.

There really is as far as I know no verifiable proof of the claim. It is just the story that has been told down through the years.

This ladies tea cake is also popular with the gentlemen. I have enjoyed this cake at The Beaumont Inn in the Bluegrass of Kentucky, and requested it for birthdays, Christmas and special gatherings. It always tastes best in the summertime. Enjoy!
