It has been quite a while since I last baked a cake from scratch but I still occasionally have fun with boxed cake mixes such as this lemon cake mix. The downside of boxed lemon cake mixes is that the boxed lemon cake mixes might contain a lot more artificial ingredients including artificial flavorings and artificial colorings such as Yellow #5 compared to if you were to bake your lemon cake from scratch. For this reason, I believe that some of these boxed cake mixes should be used very sparingly if at all when offering to children.

Most recently, I baked up a Betty Crocker brand boxed cake mix that was lemon flavored with pudding in the mix. This lemon cake was delicious! I don’t even like to wait for cake to cool. I prefer to eat hot cake. Do you?

Boxed cake mixes are usually very straight forward with easy to follow illustrative cooking instructions on the boxes. For this lemon cake, I was using a large (13 x9) glass Pyrex dish so baking instructions for a glass pan as opposed to shiny metal meant that there was a need for pre-heating the oven to 350 degrees. The wonderful thing about boxed cake mixes is the convenience.

  • When you are short on time, you can bake up a cake very quickly and easily with a boxed cake mix.
  • You still get that hot, fresh, delightful taste of something that was just homemade.
  • Additionally, your home fills with the comforting smell of a cake baking in the oven.

Hot lemon cake squares

There’s no need to be fancy and use a lot of extra utensils and bowls or even an electric mixer when baking these cakes. I did everything very simply, stirring the lemon cake batter right in the same glass Pyrex dish that the lemon cake was going to bake in.

What was needed to add to the lemon cake mix powder was:

  • one cup of water,
  • one half of a cup of vegetable oil,
  • and 3 raw eggs.

When all was blended together, there was a smooth and creamy pale yellow, lemon flavored cake batter. A lemon cake batter that looks and smells so tasty gives a good indication of how tasty the fully baked lemon cake will be!

Once the lemon cake batter was smooth and ready in the glass Pyrex dish, it needed to be added to the oven set at 350 degrees and beginning to heat up.

  • Thirty to thirty-two minutes is the perfect amount of time to let the cake bake at 350 degrees.

It came out wonderfully and indeed, we dug right in to eat the lemon cake while it was still hot!

Boxed cake mixes are inexpensive

What’s nice about the boxed cake mixes and brownie mixes is that they can be quite inexpensive especially when on a good sale. For possibly under $2 a box, you can bake a cake with the added ingredients of water, oil and eggs and that cake can be quite large, yielding enough servings for many people.

This box of Betty Crocker Delights Super Moist Lemon cake mix yields at least 10 servings of cake, possibly more if the slices or squares are cut smaller. It states on the packaging that one serving of this cake when prepared is 280 calories and contains 19 g of sugars.
