Fox Nuts - Oats - Sago Pudding
Introduction
Sweet puddings are an integral part of food in most places across the globe. People relish sweet dishes generally after the main meals though these mouth-watering items are welcome even when consumed alone.
There are mind-boggling varieties of sweet items around the world and people are inventing newer dishes to satisfy our taste buds and fulfill our cravings for these items.
Foxnuts-Oats-Sago pudding is one such sweet item that is very tasty when prepared in the following fashion.
In our country, India, Fox nut is known as Makhana. It is used in sweet dishes, vegetable curries, and even is fried and salted to consume it alone.
Ingredients
Following are the ingredients for this pudding and the quantity of prepared dish would suffice for 4-5 persons when taken along with other items at the time of normal meals.
- Oats - 1/2 cup.
- Fox nuts - 2 cups.
- Sago - 3 tbsp.
- Sultanas - 20 Nos.
- Cashew nut - 6 Nos.
- Almond - 10 Nos.
- Milk - 400 ml.
- Sugar - 2 tbsp.
- Dry coconut powder - 1 tbsp.
- Custard powder - 1 tbsp.
- Cooking oil - 1/2 tsp.
About Fox nuts, Oats, and Sago
Fox nuts are seeds derived from a particular type of water lily plant and contain a good amount of proteins, fiber, and calcium. They also contain magnesium, potassium, phosphorus, and antioxidants. Fox nuts have many health benefits and are advised to be consumed for reaping the benefits of these constituents.
Oats are considered as healthiest grains on earth. They’re a gluten-free whole grain and a great source of high-quality protein, important vitamins, minerals (like Manganese, Copper, Phosphorous, Magnesium), fiber, and antioxidants. Oats have many health benefits. Some of the main ones are weight loss, lower blood sugar levels, and a reduced risk of heart disease.
Sago is a type of starch produced by extracting it from tropical palms. It is a source of carbs but contains antioxidants also. It is used as a staple dietary supplement also.
In India, Fox nuts and Sago are generally consumed during fasting and religious activities.
Preparation
Soak Sago in water for 3-4 hours so that it becomes soft. Chop Almonds and Cashews and keep aside.
Method
Take a deep pan and put it on medium heat and pour a little (1/2 tsp) cooking oil in it. When oil starts smoking add Fox nuts to it and saute for 1-2 minutes. Take care that Fox nuts do not get stuck to the bottom of the pan and become blackish.
Remove the pan from the stove and add Oats, soaked Sago, Coconut powder and half of the milk. Now put the pan on medium heat and cook for 10-12 minutes till the mixture thickens.
Now add the remaining milk, chopped nuts, Sultanas, and sugar. Add custard powder also. It is advised to make a paste of custard powder separately before adding it to facilitate its smooth mixing. Cook on low heat for some time till the required consistency and thickening are achieved.
Remove from heat and let it cool down and the pudding is ready to be consumed.

Serving
The dish can be served in small bowls. 3 to 4 tbsp make up 1 serving of this dish.
It can be taken hot as well as cold after keeping in the fridge.
Variations
- This dish has its characteristic flavour but one can add a little vanilla essence to enhance the taste of this dish.
- Some people add a little cardamom powder also for enhancing the taste.
- One can add sugar more or less as per one's taste.
- To increase the thickness of this dish one can add cream to it.
Calorific value
Based on the calorific values of the various ingredients in this recipe the calorie value per serving (3 to 4 tbsp) comes to about 90 calories. Health-conscious people can reduce it significantly by avoiding sugar, cashews, and sultanas in this preparation.
