Fluffy Pancake with Baking Powder
I am a chef on a luxury world cruise liner. I love to cook and write recipes that are inspired by foods from all over the world.
Pancakes are considered as one of the most delicious breakfast meal. It is commonly served with butter or syrup. Other restaurants and hotels serve pancakes with fruity variety of sauces and compotes. Also, pancakes are best paired with eggs or other breakfast meats. In this recipe, I used baking powder as a leavening agent to increase the volume of the pancakes which results to fluffy texture. Ingredients
- 2 1/2 cups all purpose flour
- 1 1/2 cups water
- 3/4 cup sugar
- 1/4 cup cooking oil
- 2 tablespoons baking powder
- 2 teaspoons vanilla extract
- 1 teaspoon salt
- 2 large eggs
- butter or oil, for cooking
Utensils
For Preparation:
- 1 large bowl
- 2 medium bowls
- 2 small bowls
- 1 medium plate
- measuring cups
- measuring spoons
- sieve
- whisk
For Cooking:
- pan
- turner or spatula
- ladle
Instructions
- Beat eggs until a little bit fluffy.
- Pour in water, cooking oil and vanilla extract. Mix.
- Add sugar and salt. Continue mixing until both ingredients are dissolved. Set aside.
- In a bowl, sift and combine all the remaining dry ingredients: all purpose flour and baking powder. Whisk to incorporate all the ingredients.
- Gradually mix the dry ingredients into the bowl of wet ingredients. Set aside once done.
- Heat pan and grease it with 1 tablespoon of butter or cooking oil.
- Scoop pancake with baking powder batter mixture using 1/3 measuring cup or 1 small ladle.
- Pour mixture at the middle of the pan and just allow it to spread out.
- Cook the bottom side of the pancake until bubbles start to come out. Once done, flip it over. Cook the other side until golden brown in color.
- Serve while still hot with syrup or butter.
Tips and Techniques
- Drizzle pancakes with baking powder with any sauce available.
- Use milk instead of water for a creamier taste.
- Separate egg yolk from egg white. Beat egg white first before adding it to the rest of the ingredients to make a fluffier pancake.
- Make use of butter rather than oil for a nuttier taste.
- Lower the heat for evenly cooking.
