Fiesta ranch taquitos
Makes 60-100 Taquitos
Perfect with chicken, beef and pork.
5-10 lbs of meat of your choice
1-2 packets of fiesta ranch dressing mix
1-2 packets low sodium taco seasoning
1-2 cans rotel
1 onion diced
3 garlic cloves chopped fine.
1-2 cups water
Salt and pepper to taste.
Oil for frying.
1-3 60 count packs corn tortillas
In a instant pot or crock pot add meat of choice water, onion, Rotel, garlic, and seasonings.
Cook meat untel fully cooked and can easily be shredded.
Shred meat as fine as possible, or tell desired texture.
Heat tortillas in a small amount of oil until easily rolled without tearing.
Starting on one side of the tortilla add meat filling about 1-2 Tbs.
The gently roll tortilla around filling making as tight as can if to loose filling will fall out ends.
In a deep sided pan or fryer add enough oil for frying. Heat oil to 350 degrees.
Place 4 taquitos in to hot oil or more depending on pan size. Do not over crowd.
Fry on both sides tell Golden Brown and crispy.
Drain on paper towels.
Serve with favorite sides.
