Egg sandwich spread is considered as one of the most common sandwich filling. Most people like spread to be served with bread or crackers. In this recipe, I paired up my homemade egg sandwich spread with my homemade fluffy pancake. Enjoy the goodness of this egg pancake sandwich at home.

Ingredients

Pancake:

  • 2 1/2 cups all purpose flour
  • 1 1/2 cups water
  • 3/4 cup sugar
  • 1/4 cup cooking oil
  • 2 tablespoons baking powder
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt
  • 2 large eggs
  • butter or oil, for cooking

Egg sandwich spread:

  • 6 pieces eggs, boiled
  • 3/4 cup mayo
  • 1/8 cup sweet pickle relish, minced
  • 1/8 cup white onion, minced

For preparing the pancake :

For cooking the pancake:

For preparing the egg sandwich spread:

Serves three to four people

Instructions

To Make Pancakes

  1. In a bowl, beat eggs until a little bit fluffy.
  2. Add in water, cooking oil and vanilla extract. Mix.
  3. Dilute sugar and salt into the liquid mixture. Continue mixing until ingredients are dissolved. Set aside.
  4. In the same bowl, sift and combine all purpose flour and baking powder. Whisk thoroughly. Set aside once done.
  5. Heat and grease pan with 1 tablespoon of butter or cooking oil.
  6. Scoop pancake mixture using 1/3 measuring cup. Pour mixture at the middle of the pan and just allow it to spread out.
  7. Cook the bottom side of the pancake until bubbles start to come out. Once done, flip it over. Cook the other side until golden brown in color.

To Make Egg Sandwich Spread

  1. Cook eggs in boiling water for 10 minutes.
  2. Mince white onions and sweet pickles. Set aside.
  3. Drain hot water in the pot. Transfer eggs in cold water bath.
  4. Unpeel eggs. Separate egg whites and egg yolks.
  5. Chop egg whites and mash egg yolks.
  6. Mix all the ingredients including the seasonings.

To Assemble Egg Pancake Sandwich

  1. In a plate, lay one piece of pancake.
  2. Spread egg sandwich spread evenly.
  3. Top another piece of pancake.
  4. Serve with your favorite drink.

Tips and Techniques

In Making Pancakes

  • Replace water with milk to make the fluffy pancake creamier.
  • Choose butter rather than cooking oil for a nuttier taste.
  • Separate egg yolk from egg white. Beat egg white first to make it fluffy before adding it to yolk and other ingredients.
  • Cook pancake over low heat for better result.

In Making Egg Sandwich Spread

  • Add a little bit of sugar for extra sweetness.
  • Grate eggs to lessen the chunkiness of the spread.
  • Adjust the seasoning if needed.
