•200 ml milk

•1 tbsp Kasuri methi

•A pinch of garam masala

•1 tbsp fresh coriander

Method for Omelette Strips

•Break the eggs into a bowl, add seasoning and green chillies is optional. Now whisk the eggs really well. You can use a fork or an egg whisk.

•Set a pan on medium heat, use a non-stick preferably. Now add some ghee, oil or butter.

•Now pour the whisked eggs and let the lower layer cook, if you see the uncooked egg on the top, just pull some cooked egg to make the space on the pan and tilt your pan to fit the space with the uncooked egg. This will help in even cooking of the omelette.

•Now let the omelette set in the pan and flip one set.

•Cook on the other side and transfer the egg to a plate or a cutting board.

•Now roll the omelette and cut into 1 cm strips.

•Your omelette strips are ready.

For the Makhana Curry

•Cut the tomatoes into quarters roughly, add the tomatoes, green chillies and peeled ginger into a mixer grinder. Make a fine puree.

•Now set a pan ( use the same pans used for the eggs, less washing) on the medium heat.

•Add some ghee( you can use butter as well instead of ghee), the whole idea is for making makhana curry for the egg curry in a hurry with basic ingredients. If you have butter does add a dollop of butter.

•Add some jeera and let it crackle.

•Now add tomato puree, salt, sugar and mix.

•Now add in tomato ketchup, red chilli powder, use some Kashmiri red chilli powder if you have, it really gives good colour. Add coriander powder and turmeric powder and cook for 7-8 mins.

•You just need to remove the rawness of the tomatoes.

•Now lower the flame and in a bowl mix some fresh cream or malia or milk. Add the mixture and stir well. You can only add milk if you do not have fresh cream.

•Cook for 3-4 minutes and now add in some roasted Kasuri Methi and garam masala.

•Add in the omelette strips and stir well.

•Just cook for a minute and the curry is ready to be served.

•If you want a Makani experience like butter chicken or butter paneer, keep the curry thick. If you want makhana flavoured egg curry experience you can add more milk or water to have a curry-like feel to be had with rice. The choice is yours.

•Finish with fresh coriander. Serve and garnish with fresh cream. You can garnish it with beaten curd as well.
