Blackened Shrimp Avocado Cucumber Bites Recipe

Ingredients :

Produce

  • 1 Avocado
  • 2 tbsp Cilantro and/or parsley
  • 1 Cucumber
  • 1 Green onion

Condiments

  • 1 tbsp Lemon juice
  • 1/4 cup Remoulade sauce

Baking & Spices

  • 1 tbsp Creole seasoning
  • 1 Salt and cayenne

Oils & Vinegars

  • 1 tbsp Oil

Other

  • 1 pound shrimp, peeled and deviened

Instructions :

FOR THE SHRIMP AND CUCUMBER BITES :

    1. Toss the shrimp in the oil and the seasoning and cook in a preheated (medium-high heat) heavy bottomed pan/skillet until slightly blackened, about 2-3 minutes per side.
    2. Assemble the bites with cucumber slices, topped with avocado sauce, shrimp and remoulade sauce.

FOR THE AVOCADO SAUCE :

  1. Mix everything and enjoy!

Option: Use your favorite guacamole instead of this avocado sauce.

Cilantro Lime Grilled Shrimp Recipe

Preparation time and serving portions :

  • 2 Limes, juice and zest

Instructions :

  1. Marinate the shrimp in the mixture of the lime juice, zest, oil, cilantro, jalapeno, garlic, salt and pepper for 30 minutes.
  2. Skewer the shrimp and grill over medium-high heat until cooked, about 2-3 minutes per side.

Orange Chili Grilled Shrimp Recipe

Ingredients :

Seafood

  • 1 lb Shrimp, raw

Produce

  • 1 Heaping tsp Chili/garlic
  • 2 Garlic cloves
  • 2 tsp Orange, zest
  • 1 Red chili

Condiments

  • 1/4 cup Tangerine marmalade

Baking & Spices

  • 2 tsp Cornstarch

Oils & Vinegars

  • 4 tbsp Olive oil
  • 1/4 cup Rice wine vinegar

Liquids

  • 2/3 cup Water

Other

  • Wooden Skewers that have been soaked 30 mins

Instructions :

To make the Orange Chili Sauce

  1. Prepare your pepper by removing the stem, cutting in half, and discarding the seeds and the ribs of the pepper. If you like things extra spicy, keep some seeds!
  2. Add to a food processor with the garlic. Pulse until finely minced. Reserve a heaping spoonful to marinade the shrimp with.
  3. Heat the oil in a small sauce pan over medium high heat. Add the garlic/chili and cook for 30 seconds or until fragrant. Stir in the marmalade and vinegar and cook until the marmalade starts to "melt."
  4. In a small bowl, whisk together the water (or orange juice) and corn starch until the starch is dissolved. Add to the sauce pan and bring to a boil. Stir frequently until sauce is thickened.
  5. When ready, transfer to a bowl. Set some aside to use a dipping sauce for later!

For the Shrimp

  1. Add the reserved garlic/chili, oil, and a pinch of orange zest to the shrimp. Toss and sit for 15 minutes. This can be done before making up the sauce!
  2. Skewer the shrimp and fire up the grill to medium heat.
  3. Set yourself up for grilling with the Orange Chili Sauce and an oven-safe basting brush.
  4. Add the skewers and cook 3-4 minutes on each side, basting with chili sauce. The shrimp is done once pink.
  5. Serve with reserved sauce for dipping. I recommend making a cilantro-lime rice and a raita with grilled pita bread.

Garlic Parmesan Roasted Shrimp Recipe

Instructions :

  1. Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
  2. Place shrimp in a single layer onto the prepared baking sheet. Add olive oil, garlic, oregano, basil and Parmesan; season with salt and pepper, to taste. Gently toss to combine.
  3. Place into oven and roast just until pink, firm and cooked through, about 6-8 minutes. Stir in lemon juice.
  4. Serve immediately, garnished with parsley, if desired.

  • 1 Lemon, Zest of

  • 1/3 cup Hoisin sauce
  • 1/4 cup Honey
  • 1/2 cup Lemon juice, freshly squeezed

Baking & Spices

  • 1 Kosher salt and freshly ground black pepper

Instructions :

  1. In a medium bowl, whisk together hoisin sauce, honey, lemon juice, lemon zest, salt and pepper, to taste. In a gallon size Ziploc bag or large bowl, combine shrimp and hoisin mixture; marinate for at least 30 minutes to overnight, turning the bag occasionally.
  2. Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil.
  3. Place shrimp onto the prepared baking sheet; discard marinade. Place into oven and roast just until pink, firm and cooked through, about 6-8 minutes.
  4. Serve immediately, garnished with cilantro, if desired.

Instructions :

  1. Preheat oven to 450 degrees F. Lightly oil a baking sheet or coat with nonstick spray.

Grilled Garlic Cajun Shrimp Skewers Recipe

  • 12 Medium wooden skewers

Instructions :

  1. Soak wooden skewers in water 30 min (reduces burning of the sticks). Preheat Grill to med/high (400˚F).
  2. Combine all marinade ingredients in a small sauce pan. Bring to a simmer then remove from heat. Pour half of the mixture into a ramekin and leave remaining marinade in pan (You'll brush on half now and brush on remaining marinade after shrimp are grilled).
  3. Skewer 4 shrimp on each damp skewer without leaving spaces. Lay skewers flat on a rimmed cookie sheet. Brush one side of the skewered shrimp with sauce and refrigerate for 2 min until butter firms up. Flip shrimp over, brush second side and refrigerate 2 min until butter firms up.
  4. Place skewers on the barbie and grill shrimp with the lid on about 2 minutes per side or just until cooked through and no longer transparent. Remove shrimp from grill. Don't overcook or they will be rubbery. Brush on reserved sauce and serve.


20 Minute Honey Garlic Shrimp Recipe

Ingredients :

  • 1 1 lb medium uncooked shrimp, medium

  • 1/3 cup Honey
  • 1/4 cup Soy sauce

Oils & Vinegars

  • 2 tsp Olive oil

Instructions :

  1. Whisk the honey, soy sauce, garlic, and ginger (if using) together in a medium bowl.
  2. Place shrimp in a large zipped-top bag or tupperware. Pour 1/2 of the marinade mixture on top, give it all a shake or stir, then allow shrimp to marinate in the refrigerator for 15 minutes or for up to 8-12 hours. Cover and refrigerate the rest of the marinade for step 3. (Time-saving tip: while the shrimp is marinating, I steamed broccoli and microwaved some quick brown rice.)
  3. Heat olive oil in a skillet over medium-high heat. Place shrimp in the skillet. (Discard used marinade.) Cook shrimp on one side until pink-- about 45 seconds-- then flip shrimp over. Pour in remaining marinade and cook it all until shrimp is cooked through, about 1 minute more.
  4. Serve shrimp with cooked marinade sauce and a garnish of green onion. The sauce is excellent on brown rice and steamed veggies on the side.
