Making pancakes from scratch can be as easy as a packaged mix. With a few pantry items you can create a creamier, fluffier, scrumptious and more personalized dish. Using your own ingredients can boost vitamin content with minimal effort. With many healthy additions pancakes can be a meal all by themselves or you can go all out and serve with breakfast meats like bacon, sausage, fried ham, turkey bacon and or scrambled eggs.


  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons sugar
  • 1 teaspoon vanilla
  • 2 tablespoons melted butter
  • 2 slightly beaten eggs
  • 2 cups Milk


  1. Heat skillet to 375F or medium high. When it is hot enough a drop of water will bead up and bounce around the surface. If it sizzles away in a puff of steam you know your pan is too hot.
  2. Next put all your dry ingredients in the bowl and mix together with a whisk to blend together.
  3. Next add your wet ingredients and stir just until most of the lumps are out.
  4. Pour onto the skillet using a small 1/4 cup measuring cup.
  5. The edges and center of the pancake will start to bubble. When the bubbles burst and start to stay a bit open is when you will be able to turn your pancakes using a spatula.
  6. A few more minutes on the other side and your all done.
  7. repeat until you have used all the batter.

The Topping

You might just go for the maple flavored syrup but there are many other toppings that are great on pancakes.

A bit of sugar cinnamon and grated apples, stewed in a sauce pan makes a lovely apple syrup.

Stewed assorted berries with a bit of honey add vitamins and fiber. Just take a cup or two of any berries or fruit and add a squirt of honey or a bit of brown sugar and a few tablespoons of water. cook on low heat until boiling then reduce heat and let thicken.

Jams and jellies are also a convenient way to get your berry fix. Even nut butters or a combination of nut butter and jams.

An easy alternative is defrosted raspberry or strawberries frozen in syrup that you can buy at most grocery stores all topped with whipping cream or cool whip for those extra calories (for those who need them). Luckily if you want this option and are cutting calories they offer a lower fat option.

Then there is always fresh fruit with real maple syrup is a wonderful addition. Real maple syrup has many hidden vitamins and health properties and is delicious with fresh fruit and hot pancakes.

There are some great side dishes that can complement a pancake breakfast. Scrambled eggs and toast. Bakes beans, sausages, and bacon (also great with maple syrup). Then you can do wonders with almost any fruit you have on hand. I find that fruit always tastes better when its sliced, it helps the sugars come out of the fruit and makes an even sweeter taste. Lemon juice on apples or bananas can help prevent browning.

These ones turn out so fluffy and delicious, if only I could get my kids to like the natural maple syrup. Oh well they enjoy the other topping I make for pancakes.
