Cookies are the best combination with Tea and Coffee.

Most of you will agree with me that the Tea time or the coffee time, in the morning or the evening, are the best times, to be enjoyed with family.
The joy is enhanced, if it’s accompanied with fresh, homemade cookies, straight out of the oven.

Now, who doesn’t love chocolates? I believe, everyone, young or old, people of all age groups, like everything made with chocolate as one of the ingredients, or part of it, or the whole of it.
My family is no different. The cookies are crispy, sweet little desserts, and it has the advantage of portion control.

Many people love cookies, but they don’t like eggs. No doubt, including eggs to the cookies, gives it a nice glaze. But, here I will provide two chocolate based cookies, without the eggs, which are equally tasty.

Serves 5 people

Ingredients: For Chocolate Chip Cookies

  • 2 cups all purpose flour
  • 2 cups softened butter or refined oil
  • 1 cup caster sugar, powdered
  • 1/2 cup chocolate chips

Instructions

  1. Combine and sift all the dry ingredients together.
  2. Add the softened butter or refined oil.
  3. Mix thoroughly, all ingredients together to make a firm dough. I usually mix my cookie batter with hands.
  4. Keep the dough in the refrigerator for half an hour. In the meantime, Pre heat the oven at 180 degrees centigrade (350 degrees F)
  5. Arrange the cookies in your desired shapes, on a cookie tray, inside the oven. Keep some distance, at least 2 inches, while baking the cookies.
  6. You can check in between the baking process, through the glass window of the oven. When it turns golden, it’s done.
  7. Take it out and cool it on a wire tray. Serve hot with tea or coffee.

Variation: Chocolate based cookies

  • Using the same ingredients, as mentioned above,

2 teaspoons cocoa powder,

1 cup chocolate chunks,

brown sugar, instead of caster sugar.

Follow the same procedure as mentioned above.

Add some copped nuts, like cashew nuts, hazel nuts, walnuts, instead of chocolate chips or chunks.
Follow the rest of the procedure, as in the above mentioned recipe.

Some Tips For Making The Perfect Chocolate Cookies

  • You may use all purpose flour, or whole wheat flour, or self raising flour, or any other gluten-free flour. But, sifting your flour is an important step, which you should not miss. Sifting all the dry ingredients together is done to incorporate, air in the batter. This is especially important, if you are doing an eggless bakery.
  • Always use softened butter, to dissolve the sugar faster, and whip up in a better way.
  • While making chocolate based cookies, use brown sugar, to give a nice colour, or a caramelised texture to the cookies. If you don’t have brown sugar, you can use the normal sugar, or a combination of both.
  • Chocolate chips are easily available in super markets. However, if you don’t find it, you can use chocolate chunks, from any chocolate bars.
  • If you don’t want an overdose of chocolate, simply use some nuts in your cookies.
  • If you want your cookies to be perfect, like you often see in the cookie shops, it’s important to keep the dough in the refrigerator, for 30 minutes, prior to baking them.
  • Preheating of the oven is important. Set temperatures according to your own oven. Time of baking is important to watch, but equally important is to check the cookies in appearance. The colour says it all.
  • It’s important to pay attention to the process. That is the difference between a good cookie and a heavenly one. The later will compel you to close your eyes and enjoy the sweetness, the aroma, the flavours, and the whole feeling of having a cookie will remain in your memories.
