How to Make Spanish Omelet (Spanish Tortilla)

- ¼ cup oil
- 1 cup potato, (fine chopped)
- 1 cup onion
- 1 cup cabbage, (optional)
- ½ teaspoon salt
For omelet mixture:
- 3 eggs
- ½ teaspoon salt
- ½ teaspoon paper powder
- Mint and coriander leaves
- 2 tablespoons oil
- 1 cup mozzarella cheese, or processed cheese
- Fry vegetables: In a pan add ¼ cup oil, when oil gets heated add 1 cup fine chopped potatoes. Fry 2-3 minutes at medium flame, stir regularly until potatoes get a little soft, and fry these potatoes at medium flame for around 3 minutes. Then add 1 cup onion, fry 2-3 minutes onion also. After 2-3 add 1 cup cabbage. And then add ½ tsp salt. Close the lid and cook for 7-8 minutes at low flame. After 7-8 minutes both onion and potatoes are soft. Turn off the flame and plate out. Keep aside in a plate.
- Preparation of omelet: In a bowl, we have taken 3 eggs. Add ½ teaspoon salt and ½ teaspoon pepper powder; whisk it to make it fluffy. Add coriander and mint leaves. Now add fried potatoes and MIX it well.
Spanish omelet mixture is ready.
- Cook the omelet: Let's proceed to cook. Add 2 tablespoon oil to a pan in medium flame. Spread oil on every edge of the pan. When oil is heated. Add omelet mixture to a pan. Keep half mixture for later use. Because using cheese that’s why to use this mixture twice. Now spread the leftover mixture above the cheese and the flame is low at this time. Cover the lid for 6-7 minutes. After 6-7 minutes omelet is cooked on one side. Use the plate to flip the omelet, to cook from another side also and transfer the pan from the plate. Cook another side also 7-6 minutes, open the lid.
Spanish omelet is ready. Turn off the flame and serve it. Transfer the omelet to a plate. The perfect and mouth-watering omelet ready to eat.
- If you can not using cheese you can use the whole mixture at one time.
- Cabbage is optional. You can make it with onion and potatoes also.
- You can serve it with sauce or use it in a sandwich also can try it with pao.
- You can add more eggs if you like.
- If you are worried about too much oil use in his process of making omelet then you pre-boil ( Pre-cook) Dices potatoes in water and ½ salt in 5 minutes, drain it and add 2 tablespoons olive oil to a pan. Then add onion.
