There might not be very, much difference between onion granules and onion powder; besides, they are both made using almost the same process and dehydrated onions.
Both types have their culinary uses and best recipes where one would be preferable to the other. I love using both, but my favourite is onion granules, which is just onions that were finely chopped and dried out. However, onion powder takes the processing a step further because it is finely ground into powder after drying.
Some people prefer to use onion granules or onion powder because they don’t want to go through the hassle of getting teary while chopping a fresh onion. The moisture in the onions, which causes this reaction is removed during the drying process of onion granules and onion powder.
Onion granules are perfect for recipes that desire onion flavour, but you don't need too much of the onion texture that freshly chopped onions would bring in the meal. It gives your dish the sweet taste of onion. It can also be rehydrated and used as finely and freshly chopped onions or garnish. Onion powder is also great for recipes that need onions flavour, the powder adds the flavour and cannot be seen.
Both the granules and powder can be sprinkled and rubbed on meats with other spices before cooking.
Granulated onion offers more texture in addition to flavour and taste. Traditional dishes like meatloaf and casseroles would do better with onion granules instead of powder.
The powder is used in soups, eggs, sauces, dips, dressings and spread on other dishes that you want to add that distinct but subtle onions flavour.
The difference in taste and efficacy between the onion granules and onion powder is a lot. Granulated onions give texture and a richer onion taste when used in cooking; however, since onion powder is finely ground, it is more compact and has more concentration than the onion granules. So when cooking with onion powder, you would use less than the amount you would use if it were onion granules. For example, where one tablespoon of onion granules is equivalent to one onion, one teaspoon of onion powder is equal to one onion.
If you are thinking of getting both but considering the cost, you could always get granulated in your kitchen cabinet, and when you want powder, you can ground it into a fine texture to get what you want.
