  • ¾ cup milk
  • ¼ cup all-purpose flour
  • ½ teaspoon salt

  • ½ pound parsnips, peeled and diced
  • ⅓ cup dry white wine

  • Preheat oven to 375 degrees F (190 degrees C). In a small bowl, whisk together milk, flour, salt, and pepper; set aside.
  • In a large saucepan over medium heat, melt butter. Add onion and celery; cook until softened, about five minutes.
  • Add mushrooms and parsnips; cook until tender, about ten minutes. Stir in wine; cook for one minute.
  • Pour in milk mixture; cook, stirring constantly, until thickened, about five minutes.
  • Line a nine-inch pie dish with one of the crusts.
  • Pour filling into the crust; top with remaining crust. Crimp or flute edges.
  • Cut several slits in the top to vent steam.
  • Bake until crust is golden brown and filling is bubbly, about 30 minutes.
  • Let cool for ten minutes before serving. Enjoy!
