I know it's hard finding a good gluten-free bread that holds together, that is still springy, full of the volume of regular bread, and that actually tastes like the sandwich bread you were used to before you started this gluten-free diet.
Worry no more! You'll forget you were veer missing out on anything. Granted this tastes a little like almonds, but I really like the flavor and have enjoyed this bread. By adding the 1/4 cup of water and the cup of almond butter, this makes the bread a little more moist, and strangely makes it taste more like whole wheat bread.
Obviously you can use a combination of almond flour and coconut flour in this recipe, although almond flour is a little bit more expensive. You can also use a variety of other alternative flours and starches to change the consistency, taste, color, and denseness of your bread.
Have fun experimenting until you find a combination that suits the tastes and preferences of you and your family. Isn't that what's fun about cooking anyway?!
Consider an Apple Butter Spread to really make this delicious as toast, or some sort of honey meat (honey turkey, honey baked chicken, honey ham, etc.) to really bring out the almond and sweet honey flavor in this bread.

1 loaf of bread (# of slices depend on the slicer)
- 1 1/4 cup coconut flour
- 1 cup almond butter
- 4 large eggs
- 1 tablespoon honey
- 1 teaspoon apple cider vinegar
- 1/4 cup water
- 1 teaspoon baking soda
- Preheat your oven to 350 degrees F and prepare your favorite bread loaf pan by spraying it generously with cooking spray.
- In a large bowl, add your coconut flour (or other kind of flours/starches).
- In another smaller bowl, crack and beat your 4 eggs together until smooth.
- Add your cup of almond butter to your eggs and beat again until smooth.
- You can choose to use any kind of nut butter for this recipe, but it will change the color of your bread. Almond or hazelnut butter will give you a lighter colored bread, whereas walnut will make your bread darker. It will still come out fine, but might look and taste a mite bit different.
- Add your egg mixture into your flour, and preferably with a hand mixer as it will be a little difficult to continue mixing by hand, mix both together thoroughly.
- At this point, add in your honey and apple cider vinegar and mix thoroughly.
- Finally, you'll want to dissolve your teaspoon of baking soda in your 1/4 cup of water until completely dissolved.
- Add this into your main mixture and mix up well.
- When your batter is thoroughly combined, pour it into your prepared loaf pan.
- Bake for about 30-35 minutes.
- Remember by temperatures and times may be a bit different because I live at 5000 feet elevation. Our air is super dry and the elevation changes the way things cook. You'll have to find the right numbers for yourself. Just watch your bread closely and when brown on the top, test it for doneness (a knife or toothpick into the middle) to know when to pull it out.
- Great tip: Crush up almonds to pour into the bottom of your loaf pan and across the top of your batter, so that each slice will have some lovely nuts for crunch on it. This is my favorite way to make it! I love almonds!

I made my bread in the bread machine my lovely sister-in-law bought us for Christmas, that we are getting a great deal of use out of. However, this recipe can just as easily be made in a loaf pan (and this is the recipe I'm providing for you).
One major tip: Get yourself an electric knife. I bought mine at a garage sale for 50cents. If you can keep your eyes open, craigslist, ebay, or even your local thrift or garage sales my lend you this nifty item.
We had so many problems actually cutting our bread nice and neatly so that we'd have slices of bread for sandwiches, garlic bread, cinnamon toast, etc. We did a great deal of research on bread cutters and slicers, and this was the cheapest, easiest solution. We LOVE our electric knife now and never make homemade bread without it!

Homemade gluten-free almond bread sounds delicious! A couple years ago I got into the gluten-free craze and quickly realized that my body has a much easier time processing this food and, in most circumstances – to my delight, did not require having to sacrifice flavor. Although highly unlikely I will make this recipe myself, as I rarely cook, I do have the perfect person in mind. ; ) Thanks and voted up!
