Lavash Bread for Pizza or Appetizer Crusts

Lavash bread as part of the culinary basics is a very versatile and relatively low fat substitute for many forms of doughs and crusts.

For instance, you can use Lavash bread in place of tortillas or wraps. You can use it in place of pizza dough. You can use it in place of flat bread and you will love the flavor and the different quality that it brings to the recipe.

I first discovered Lavash bread at Trader Joe's. I used it to create my Lavash bread appetizer. Try it - I think you'll like it!

Cooking with Lavash Bread

Lavash bread comes in different thicknesses depending upon where you buy it. 

It also is soft like a tortilla but can quickly dry out and become brittle and hard, breaking apart.

Treat Lavash bread much as you would a tortilla in terms of storage and use. 

Lavash bread is a flatbread of Turkish origin and is used to make everything from wraps to pizza dough to sandwiches as in the video. 

I actually discovered it quite by accident when I was trying to recreate a recipe for an appetizer that I had at a restaurant in Bend, Oregon.  It was a flatbread appetizer with kalamata olives, mushrooms and cheese.  Experimenting with tortillas did not give the right texture to my trials and Naan Indian bread did not either. 

When at last I discovered Trader Joe's Lavash bread, it was the perfect choice!

Lavash bread also freezes well.  Freeze in air-tight zip-lock bags that are labeled for up to 6 months.  Thaw and use as needed.

More about Lavash Bread

Lavash bread is produced mainly in Iran, Lebanon and Turkey.

There are many good things about Lavash bread. It has reduced carbs and is high in protein.

It is similar to pita bread in that it is basically the same recipe or close to it - but it is rolled very, very thin.

People making Lavash bread give it the 'windowpane' test. If it is held up to the light and if you can see through it, basically it is thin enough!

You can make it at home - just follow a pita bread recipe and roll extremely thin and cut into rectangles.

Bake at 500 degrees for only minutes.

Some people use Lavash bread to make their own crackers. Since it dries out easily anyway, you just brush on a bit of oil and then sprinkle with sesame seeds for instance. You can bake slightly and then wait until it dries out - break into crackers.

Use the Lavash bread crackers for dips or snacking.

Lavash bread makes a wonderful symmetrical wrap because of its rectangular shape - any ingredients that you use to make a regular wrap or a burrito can go inside Lavash bread.

It is also known as 'cracker bread' because it dries out so quickly and so thoroughly so as to form crackers.

Lavash bread makes a wonderful appetizer with almost any ingredients that you can think of. I brush mine with a little specialty oil, then add ingredients to my liking, top with a bit of feta cheese or perhaps a bit of other flavorful cheese, then bake until the Lavash bread starts to just turn brown. It stays nice and crisp after baking so the appetizers are easy to eat.

To use Lavash bread as a pizza dough, simply put it on cookie sheets and add ingredients as usual. You can make a traditional pizza using Lavash bread, or you can make something as exotic as a Marguerite pizza or a basil, feta and tomato pizza. The pizza will be rectangular but it's a wonderful serving tool to be able to cut it into squares and serve!

Yes - and I love that it stays nice and crisp. I usually do a Greek pizza with it - not sure why but I love feta and basil but it is a great dough to work with. I confess I love Trader Joe's the best though!
