Cucumbers to Pickles
First of all, when you go out to the cucumber patch, there will literally be hundreds of cucumbers. They will all be different sizes.
The tiny cucumbers are used for several uses. They can be pickled in any type of brine you choose. They can be used to fill in the spaces when you create a jar of larger cucumbers.
The next size of cucumbers is used to stack in layer one and layer two.
Then, the next size of cucumbers is placed in the jars standing up. Many times one pickle will reach nearly to the top or upper third of the jar. The smaller cucumbers are added to the top of them.
The next size is sliced crossways to create pickle chips, like you find on your burgers.
The next size is peeled and sliced and made into refrigerator pickles.
The next size, probably orange, are either discarded into the compost pile or made into yellow pickles. The seeds are removed and the peeling is removed. I have heard stories about orange pickles but ever tried.
Some have made a sweet pickle like a watermelon rind pickle with them, but I have not.
