What You Will Need
- 10 Large Oxtails
- 1/3 cup olive oil
- 1 tbsp Tajin seasoning
- 1 tbsp Garlic powder
- 1tbsp Onion powder
- 1/2 cup sherry wine
- 1 cup beef stock
- 1 cup crushed tomatoes
- 6 cloves crushed garlic
- 2 large carrots (cut thick)
- 1 Vidalia onion chopped
- 2 diced red pepper
- 1 tablespoon salt (add to taste)
- 2 teaspoons paprika
- 1 teaspoon cayenne pepper
- 1/2 portuguese sausage cut thick (Chorizo)
Start by washing your oxtails under some cold water and dry with a paper towel before placing them in the crockpot. Wash and chop your peppers and set aside
Place your olive oil in the crockpot followed by your oxtails. Remember, they shrink so it is perfectly fine to have a tight fit. Next add your onions, garlic, peppers and chorizo, followed by all of your dry ingredients and your crushed tomatoes. Mix together with large wooden spoon or wash your hands well and use your hands.
You are all set! All you have to do is set your crockpot to high for the first 2 hours. Lower to medium, add carrots and let cook for 3.5 to 4, lowering heat to low for the last 45 minutes.
Serve over your favorite rice and you have yourself a delicious meal.
