Crawfish and au gratin potatoes are a match made in heaven. The hot rich, creamy cheese with the potatoes and the spicy crawfish is like nothing else.

  • 1/2 cup Butter
  • 1 cup Onion, Chopped
  • 1 cup Bell pepper, Chopped
  • 2 teaspoons Garlic, Minced
  • 1 teaspoon All-purpose flour
  • 2 teaspoon Creole seasoning
  • 1/2 teaspoon Salt, To taste
  • 1/2 teaspoon Black pepper, To taste
  • 1 cup Heavy whipping cream
  • 1 cup Cooked crawfish tail meat
  • 1 1/2 cup Mozzarella cheese, Shredded
  • 1 cup Pepper Jack Cheese, Shredded
  • 2 pounds Potatoes, Sliced 1/4 inch thick


  1. Preheat oven to 375
  2. In a medium saucepan, melt butter over medium heat. Add onion, bell pepper, and garlic cook until tender about 3 minutes.
  3. Add flour, creole seasoning, salt, and pepper and cook for 1 minute; add cream and cook until thickened, about 6 minutes.
  4. Remove from heat and stir in crawfish.
  5. In a bowl, mix all the cheese together.
  6. In a 13x9 baking dish layer 1/3 potatoes, half crawfish mixture, and one-third of the cheese. Repeat until out of everything but cheese ending with a layer of potatoes . Cover with foil.
  7. Bake until potatoes is tender, about an hour. Uncover and sprinkle with the last 1/3 of cheese. Bake another 10 minutes or until cheese is melted and turning brown.
  8. Let cool for 20 minutes before serving
