Crab Fried Rice Recipe

Instructions:
- First, prep all of your ingredients, including your aromatics--ginger, garlic, cilantro, and scallion. Prep the beaten eggs as well and set them aside. Only when you have all the ingredients prepared and ready to go should you start cooking.
- Heat the cooking oil in a wok over medium-high heat. Add the ginger first, stirring for 30 seconds. Then add the garlic. When the garlic is just cooked (before it starts to turn golden), add the cooked rice to the wok, and turn up the heat to high. Stir fry the rice for 3 minutes or so until it's thoroughly combined with the ginger/garlic mixture and/or warmed through if you're using leftover rice.
- Add the white pepper, fish sauce, soy sauce, and shaoxing wine to the rice.
- Using your spatula, spread the rice out into an even layer along the surface of the wok. Pour the beaten egg evenly over the rice. Stir the rice until all of the egg is cooked and incorporated. The egg coats the rice and makes for a most excellent savory experience. Much better than broken up bits/huge chunks of scrambled egg throughout.
- Before adding the crab, use your spatula to once more spread the rice evenly in the wok. Add the crab to the rice and stir fry thoroughly. When the crab is warmed through, add the scallion and cilantro and stir-fry briefly until the herbs are just wilted. Serve and finish with a squeeze of lime.

1 cup: White rice, short grain

Instructions:
- Place the rice in a fine mesh strainer and run cool water over the rice until the water runs clear. In a medium saucepan or rice cooker combine the rice and the chicken stock.
- Simmer until of all the stock is absorbed and the rice is cooked, about 15 minutes. Fluff with a fork then spread the rice out on a baking sheet in an even layer to cool completely.
- Heat a wok over medium-high heat. Add the vegetable oil and heat through. Crack the eggs into the wok and scramble until just set, about 1 minute.
- Add the sesame oil, garlic, the whites from the green onions and ginger. Use a rubber spatula to move the mixture consistently until the garlic is golden brown, about 15 seconds. Add the rice and stir to combine, about 1 minute. Add the fish sauce, rice wine vinegar and soy sauce, stirring consistently to combine the mixture. Gently stir in the crab meat, keeping some of the crab in large pieces. Remove from heat and serve.

- Heat a skillet over medium-high heat. Add the oil. Once the oil is heated and shimmering, add the eggs and give it a light scramble.
- Add the crab paste with soya bean, if using, and stir to combine.
- Add the rice and toss. Add the crab meat and toss.
- Add the fish sauce and boullion and stir.
- Give it a taste and add the sugar, if desired.
- Garnish with a couple springs of cilantro and serve with cucumbers and lime wedges.
Lump Crab Meat Fried Rice Recipe

- Instructions:
- Heat a wok or skillet over medium heat with the avocado oil and chopped garlic. Toss the garlic until it starts to turn golden and fragrant.
- Add the eggs and let them slightly set before breaking it up and scrambling.
- Turn the heat up to high, add the rice, and stir fry until well combined.
- Next add in the soy sauce, fish sauce, sugar, and ground white pepper. Toss until everything is well combined.
- Let the rice sit in the wok for a few seconds to allow it to get some color and toasted bits.
- Add in the crab meat and gently stir fry. Again, you can let the rice sit in the wok for a few seconds.
- Turn off the heat then stir in the sliced green onions and chopped cilantro.
- Serve with sliced cucumbers and lime wedges.
Crab Meat With Scallions Fried Rice Recipe

Instructions:
- In a shallow plate, mix rice with ½ teaspoon salt and 1½ teaspoon of oil. While doing this, use your fingers to break up the rice.
- Place a wok or pan over medium heat and add about 1 teaspoon of oil. Then add the beatened eggs, swirl and scramble briefly and remove from the heat while the eggs are still soft and a little runny. Transfer to a plate and set aside.
- Heat another teaspoon oil in the same pan and add the white parts of scallions. Sauté briefly until fragrant, then add half of the garlic and also sauté briefly until fragrant.
- Add crab meat, stir and cook for about 15 seconds and then add 1 teaspoon of fish sauce and ½ teaspoon of soy sauce. Stir and cook until crab meat is heated through and smells delicious, another 15-20 seconds or so. Transfer to a plate and set aside.
- Heat the remaining oil in the pan and add the remaining garlic. Sauté briefly until fragrant and then increase the heat to medium high. Add rice, stir and toss constantly to break up the rice for about a minute. Add the remaining soy sauce and continue to stir and fry for another 1-2 minutes.
- Add crab meat to the pan, stir and cook for 30-40 seconds to distribute the crab meat and let the flavors fuse. Then add scrambled eggs, break up the eggs into small bits and toss quickly with the rice for a few seconds.
- Sprinkle the green parts of scallions and black pepper, give everything a stir to combine then transfer to serving plates immediately. Serve hot with some extra soy sauce on the side.
Crab With Shrimp Fried Rice Recipe

Instructions:
- Prepare Spanish rice mix per the package instructions omitting the tomatoes.
- While rice cooks, sauté onions and bell peppers in a small amount of olive oil until soft and lightly caramelized.
- Add imitation crab, shrimp, and salad shrimp.
- Cook just until raw shrimp becomes opaque.
- Sprinkle mixture with half a teaspoon or so of Old Bay Seasoning.
- Combine cooked rice and seafood mixture.
- Add more Old Bay Seasoning, salt and pepper to taste. Serve warm.

Instructions:
- Add the rice in a pot with water, butter and a pinch of salt & pepper. Bring to a boil, stir, cover. Turn heat to low and let simmer for 20 minutes or until all the water evaporates and the rice is done.
- In a large skillet cook the bacon until crispy. Keeping the grease in the skillet remove the bacon from the skillet and crumble the bacon, set aside. Add oil to skillet with bacon grease on high heat. Once hot add in the celery, peppers and onions, season with a pinch of salt & pepper and cook until soft on medium heat, stirring occasionally, about 10 minutes.
- Add crab meat to the skillet and season with old bay, cajun, smoke paprika and garlic powder. Cook for 5 minutes, stirring occasionally.
- Add 1 teaspoon of chicken bullion and 1/2 cup water to the skillet. Bring to a boil and let liquid reduce by half. Add in the cooked rice, stir to incorporate everything together and cook for about 5 additional minutes and your all done. Serve immediately.
Blue Crab Fried Rice Recipe

Instructions:
- Bring the chicken stock to a boil in a medium saucepan. Add the rice. Cover, then reduce the heat to low and simmer until the liquid is absorbed, 15 to 20 minutes. Remove from the heat, then fluff with a fork.
- Meanwhile, pulse the celery, garlic, onion and bell pepper in a food processor until minced. Heat the butter and oil in a large cast-iron skillet over medium-high heat until the butter melts. Add the minced vegetables. Saute until the vegetables are tender, about 5 minutes.
- Add the crab meat and House Seasoning. Cook until the crab meat has browned, about 5 minutes. Add additional butter, if the vegetables become too dry and begin to brown too quickly. Stir in the rice and tomato. Cover and simmer until the rice is fluffy, 5 more minutes. Uncover and sprinkle with parsley before serving.

- Heat the oil in a wok over medium-high heat until very hot.
- Add the shallot and cook for 2-3 minutes until it begins to soften.
- Add the ginger, garlic, and half the minced scallions and cook for 45 seconds or until fragrant.
- While the shallot is cooking, combine all the ingredients for the sauce in a bowl, including the soy sauce, fish sauce, sambal oolek or sriracha, Shaoxing wine, ground white pepper, and lime juice.
- Pour the sauce into the wok and bring to a boil. Cook for 30-40 seconds. Swirl the sauce around to incorporate it with the aromatics.
- Add the rice to the wok and use your spoon to gently flatten it out across the wok and into the sauce. Cook without moving for 1 minute. Pour the whisked eggs over the rice and cook for 1 minute more.
- Using your spoon or spatula, turn the rice and eggs into each other and flip until the egg is mixed well into the rice and the rice is well-coated with the sauce. Fold the crab and half the cilantro into the rice and cook, stirring occasionally, for 2-3 minutes more. Be careful not to overmix the crab as you want to maintain some of the large lumps.
- Taste and season the crab fried rice to your tastes, adding more soy sauce, fish sauce, or sambal oolek as desired. Turn off the heat.
