I love cooking with bourbon, and when you add to Collards with some hammocks and hot sauce, it can't get any better.

  • 2 Tablespoons Olive oil
  • 1 large Onion, Chopped
  • 3 cloves Garlic, Chopped
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 2 Tablespoons Favorite Hot sauce, More or less to taste
  • 2 pounds Collard Greens, Chopped, cleaned, stem removed
  • 2 cups Bourbon
  • 2 32 once cartons Chicken Broth
  • 1/4 teaspoon Crushed Red Pepper
  • 2 large Smoked Ham Hocks
  • 1/4 cup Apple Cider Vingar


  1. In a large Dutch oven, add oil, onions, garlic, salt, pepper, and red pepper. Cook over medium-high heat until onions are soft.
  2. Add collards stir to combine, and cook for 5 minutes.
  3. Add bourbon, scraping the bottom of the pan to get up any brown bits.
  4. Turn heat to high add hot sauce, and stir to combine.
  5. Add Broth and ham hocks. Bring to a boil.
  6. Reduce heat and let simmer until hammocks and collards are tender about 1 hour.
  7. Uncover and cook until liquid is reduced by one-third, about another hour.
  8. Remove from heat. Remove ham hocks and let cool until you can handle them.
  9. Remove meat from ham hocks. Discard bones and add meat and vinegar to the collards. Enjoy
