What is truffle and how can it be used in making a cake?

By truffle we mean, a soft sweet made of a chocolate mixture, typically flavored with rum and covered with cocoa. Truffles can be used in making icings for cup cakes, they can be used to make coffee chocolates also. Truffle not only adds to the taste of the cake but also enhances its look because of its shiny glaze.

Now, to use a truffle in cake you need to keep in mind, that truffle takes 6-7 hours to set at room temperature. So, to prepare this cake one must prepare the truffle at least 7 hours before making the cake. That is why, a truffle cake takes a day long time to be prepared if truffle is not prepared one day before. Also, you can use a truffle that was prepared some time ago because when stored at room temperature, these truffles should remain good for up to one to two weeks. However, if you store them in the refrigerator (which I recommend) they should last up to six months.

Ingredients

For the base:

  • 1 cup refined flour
  • 1 teaspoon lemon juice/ vinegar
  • 4 eggs
  • 4 tablespoons cocoa
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup oil
  • 1/4 cup milk

For the filling:

  • 1 tablespoon sugar
  • 6 tablespoons whipping cream
  • 2 tablespoons prepared truffle
  • 2 drops chocolate essence

For truffle:

  • 250 gm dark chocolate compund, chopped
  • 250 milliliters fresh cream
  • 2-3 tablespoons butter

For decoration:

  • 5-6 balls silver beads(edible)

Instructions

  1. Firstly, prepare truffle and keep it overnight or at least for 6-7 hours. To make truffle, pour a small amount of water in a vessel and add fresh cream in it. Let the cream come to a boil and then switch off the flame and add the chopped chocolate into this. Cover it immediately with a lid, and let the chocolate melt in hot cream. Add butter if you want extra shine in truffle.
  2. Remove this lid after 15 minutes and gently mix this mixture until well mixed. Keep this mixture at room temperature and cover it using a lid. Keep aside for 6-7 hours.
  3. For base, sift the dry ingredients(refined flour, baking soda, baking powder, cocoa). Now, in a bowl separate the egg whites and add lemon juice, vanilla extract into egg whites. Beat them until the foam sticks to the vessel when turned upside down.
  4. Now mix sugar in three batches. After this, add the separated yolks into this mixture and beat them until pale white. Into this add the dry ingredients in three batches and mix by cut and fold method using a spatula.
  5. In a container, add milk and oil along with some cake batter and mix them well. Now, add this mixture into the cake batter and again mix using cut and fold method. Clean the sides of the bowl using spatula. Pre-heat your oven at 180 degree Celsius for 10 minutes.
  6. Grease a 7-inch round cake tin with butter and dust some refined flour. Tap off the extra flour and pour the batter into this tin. Bake it for 30 minutes at 180 degree Celsius. Once done, let the cake cool down.
  7. Cut the cake into three parts using bread knife and moisturize the layers using syrup of sugar if you want to make this cake more sweet. If not, use water to soak the cake.
  8. Prepare an icing layer by whisking the whipping cream using a balloon whisk or hand blender and create a tough cream. Into this add the already prepared truffle and chocolate essence as mentioned in the ingredients. Now cover the bottom two layers with this cream.
  9. For the last layer, first cut the dome shape of the cake and level it. Then using double boiler method i.e keep a water filled vessel on gas stove and put the vessel containing truffle above it. This will melt the truffle gradually. Remember to melt it only until it is slightly soft. Do not over melt.
  10. Now cover the top most layer and sides with the truffle. Level it very well. Let it cool down first. Then again melt the truffle and using a spoon drop some chocolate from the corners of the cake. After this, in a piping bag, add some truffle and rosette cone to create some good decorations on the cake according to your preference. To enhance the look take small crumbs of cake and spread them on cake. Use silver beads to decorate the flowers. Refrigerate this cake for 15 minutes and then enjoy this delicious truffle cake.
