Chocolate Muffins with Icing

The chocolate muffins recipe comes with icing and has secret Ingredients to keep it dryness. The chocolate muffins are incredibly rich and fluffy.


  • 115g butter
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 & 1/4 cups cake flour
  • 1 teaspoon baking powder
  • 1/2 cup cocoa powder
  • 3/4 cups full cream milk

  1. Preheat oven to 180° celcius. Prepare and line your 12 muffin tin.
  2. In a bowl add in butter, sugar, vanilla extract and salt. With a hand mixer beat until it becomes light and fluffy (5 minutes)
  3. Add the eggs one at a time beating throughly after adding each egg. Add in sifted flour,cocoa and baking powder. Use hand mixer to bring together whilst slowly adding milk stop when batter is just combined. Add batter to prepared muffin tin.
  4. Bake in oven for 15 minutes or until inserted toothpick comes out clean (Do not want to overbake).
  5. After a few minutes remove from pan and place on a cooling rack. Allow to cool completely. Now add the icing!

For icing

  • 225gm butter
  • 2 & 1/2 cups icing sugar
  • 1/4 cup cocoa
  • 3 tablespoons double cream or fresh cream
  • Pinch of sea salt


  1. First beat butter with a hand mixer for a few minutes until it becomes light and fluffy.
  2. Sift in icing sugar and cocoa powder. Mix with hand mixer whilst slowly adding in your cream. Add in your salt and mix well.
