How to Make Chocolate Croissant Rolls?

Though nothing compares to real chocolate croissants, this shortcut variation is perfect when you’re short on time, baking with kids, or simply want something much easier. Chocolate is dough’s best friend. These chocolate crescents are filled with rich chocolate, topped with more chocolate, and take only 20 minutes from start to finish. It is a buttery, flaky pastry of Austrian origin but mostly associated with France.

Preparation Method:

The dough is layered with butter, rolled and folded several times in succession, then rolled into a thin sheet. The process results in a layered, flaky texture, similar to a puff pastry. These croissants are sinfully easy to make. We use a store-bought puff pastry sheet instead of making our croissant dough at home. The puff pastry sheet needs to be thawed before use. So, either place it into the refrigerator and leave it overnight or remove and thaw at room temperature for 40 to 50 minutes. Once the puff pastry has thawed, all you need is 30 minutes to make the croissants. Leave them plain; add chocolate or another favorite filling. These are croissants, so when making, assume each person will eat two.

Step 1: Dough Preparation

  1. In a jug/glass add warm milk, yeast, and sugar. Mix thoroughly, cover with a lid and let it rest for 5 minutes. The yeast will get activated and it will rise.
  2. In a cup add water, flour, salt, butter, sugar, and add yeast mixture. Mix with the help of a wooden spoon. knead a soft dough.

Step 2: Chocolate Ganache Preparation

  1. In a bowl add heavy whipping cream and microwave it for 2 minutes. Add 250 g Unsweetened dark chocolate, icing sugar, and vanilla essence.
  2. Let it sit for 3 minutes. Mix well until well combined and smooth lumps-free Ganache is formed.

Step 3: Unipuff Preparation

  1. In a bowl add water, rice, and ghee. Stir it and leave for 5-6 hours. Then squeeze out the water well. It can be stored in the fridge for 6 months.

Step 4: Assembling

  1. Put the dough on cling film. Place perpendicular cuts on the top of the dough and spread them in the shape of a square with the help of your hand. Wrap in cling film and put it in the refrigerator for 4 hours or overnight.
  2. Roll your dough into 14×10 inches. Place your unipuff on one half of the rolled dough and fold the other half on top of it and seal properly by folding the dough over it.
  3. Roll it down again into a thin rectangular shape, fold into 3 folds and wrap in the cling film. Refrigerate it for 30 minutes.
  4. Repeat the above step 3 more times and finally roll down into 3 mm thick dough.
  5. Cut the uneven sides of the dough to make an even square shape. Cut 1.5 inches strips of the dough. Wrap them around the cream roll mold. Make 14 rolls like this and shift onto a baking tray.
  6. Eggs wash the rolls and bake in preheated oven for 15-18 min at 175 degrees.
  7. Let them cool down at room temperature and fill in with the prepared Chocolate Ganache.

  • 2 tablespoons salt
  • 125 g butter
  • 50 gallons OR 1/4 cup caster sugar
  • (7×10) 180 g unipuff sheet

For Unipuff:

  • 1 kilogram ghee
  • Chilled water as required

For Chocolate Ganache:

  • 2 cups Whipping cream
  • 250 grams candyland unsweetened dark, cooking chocolate
  • 1 teaspoon vanilla essence
  • 1/2 cup icing sugar

For Egg Wash:

  • 1 egg
  • 2 tablespoons water

Notes

  1. This recipe can easily be doubled.
  2. Feel free to swap this packaged dough with homemade pastry dough instead.
  3. Try making chocolate croissants completely from scrates.
