Chili's Recipe - Monterey Chicken Copycat
For each serving, you will need:
1 skinless, boneless chicken breast
3 teaspoons of your favorite barbecue sauce (Bull's Eye brand tastes almost identical to the Chili's Monterey chicken recipe)
2 pieces of cooked thick, quality bacon, drained well (applewood smoked bacon if you want it to taste like Chili's Monterey chicken)
1/4 cup of monterey jack and sharp cheddar cheese mix
Pound the chicken breast so that it is flat. This will also help make it amazingly tender. Season with salt and pepper to taste.
Cook the chicken over an outdoor grill, in an indoor grill, or in a skillet, preferably cast iron, that has been sprayed with cooking spray.
After adding to a plate, spread the barbecue sauce over the chicken, add the bacon and cheese mix. Place in an oven broiler or microwave long enough to melt the cheese. Sprinkle the top with pico de gallo or just chop up some Roma tomatoes and green onions for the top. Serve!
Chili's Margarita Grilled Chicken Copycat Recipe
Chili's Margarita Grilled Chicken Recipe Clone - Serves 4
You will surprised at how easy and quick this Chili's recipe is to make.
4 boneless, skinless chicken breasts
Approximately 1 cup margarita mix
Salt and pepper to taste
Black beans
Pico de Gallo
Brown rice
Pound chicken breasts. Next, let them marinate in the margarita mix in the refrigerator. Overnight is best, but let marinate for at least two hours.
Remove chicken breasts from marinade and sprinkle with salt and pepper, your preference.
For the best flavor, use a grill to cook the chicken breasts. If not, try to cook the chicken in a cast iron skillet. Cook on medium high heat. Lightly spray the skillet with a cooking spray before adding the chicken.
After chicken breasts are nice and brown, serve over black beans. Add Mexican brown rice and pico de gallo on the side.

I can't believe no one has asked for a recipe for Chili's mashed potatoes! They are the reason I eat there. I'm posting the recipe for them that a friend my mine got from a Chili's manager.
INGREDIENTS
- 2 lbs Yukon Gold Potatoes (cubed and peeled if you don't like the skin)
- 3/4 cup Low Fat Buttermilk
- Salt & Pepper
- 2 1/2 tablespoons Sambal Oelok
DIRECTIONS
In medium saucepan add cold water and bring potatoes to a boil then reduce heat and simmer until thoroughly cooked (about 12-16 minutes). Drain. Put potatoes back into pan and stir occasionally for 5 minutes to dry them out. In a small saucepan, warm buttermilk over medium-low heat but DO NOT BOIL. Run potatoes through ricer, mill, or you can hand mash them. Stir in buttermilk until you get desired consistency. Add salt-and-pepper to taste and stir until combined. Add sambal oelek a teaspoon at a time and taste after each addition.
Yields 4 servings

When visiting the US for work, I always found Chilis in San Diego (Mira Mesa) to be superb. It was just outside the hotel, so often got a visit, as the hotel restaurant was overpriced and dull. A full meal there, with doggy bag (leftovers to go) was enough for 2 days and well within budget guidelines. Fell in love with the Shanghai Wings.
Chilis UK is a poor comparison, especially the godawful one in Cambridge. Dunderheid staff, slow, cold food, wrong orders, overcharged. Shame that we can't do fast food style food well here in the UK.

@Elijah; Re: Chicken Crispers
i worked there in my early 20s and used to rummage through the kitchen looking at the recipes & the walk-in cooler. the crispers are super, super easy. all you need is TEMPURA batter, chicken tenderloins, & a little salt/seasoning. follow the instructions on the Tempura Batter box. make sure you're using ICE COLD water to begin with. lightly season your chicken tenderloins or season the Tempura Batter instead. don't go crazy with the salt or you'll ruin a good batch of batter.
make sure your deep fryer is nice and hot and ready to go. dip tenderloins in batter and fry 'til golden brown. don't over-cook or the meat will be dry and unenjoyable. as for the honey-mustard dressing, the recipe is simple. Mayo (or Miracle Whip), Grade A honey, and yellow mustard. start off with half a cup of mayo and stir in about a tablespoon of mustard. then add honey, enough so that the consistency of the dressing is still thick and the color is a dark mustard. taste...you should get a slight mustard kick, taste the creaminess of the mayo/miracle whip, and delight in the honey flavor. for a light/fat-free version, use the appropriate choice of mayo.
for those of you who love the sauces and are not having luck with finding recipes that tingle your tastebuds, you can always approach the store manager and ask if you can purchase a bag/container of their sauces. they'll be happy to oblige if you're super sweet!!!
Carmen on March 16, 2010:
I'm still looking for the Bone Buffalo Chicken Wing Sauce. It's not what people or posting, aka. Crystal Louis. Hot sauce and margarine, no way, that stuff is too thin. Chili's sauce is thicker. Any ideas?

All we do for the chips is just throw them in the fryer and salt them (no idea who delivers them, I'm never there that early). For the nachos, you top corn tortilla wedges with mashed black beans, queso, and top with mix c ( shredded cheddar and jalapeno jack cheeses). Broil them for 6-7 minutes and top each with a jalapeno slice. Wanna know more? Email me at AmberD19@hotmail.com and I'll try to help you out as best as I can.

So sorry, May. I've never been to that particular Chili's restaurant. We also have a Chili's restaurant in our hometown in which the service is terrible and the food is hit or miss (usually miss).
