Chicken and Dumplings from Scratch

Chicken and Dumplings is one of the most inexpensive meals I make for my family and they love it!

It is definitely a southern recipe but it fills the belly and warms the heart. The total cost for the meal is about $7.50.

Ingredients:

  • One whole chicken, about 3 lbs.
  • 2 cups flour
  • 2 TBSP shortening
  • salt
  • onion
  • pepper
  • 2TBSP butter
  • 2 cups milk

Directions:

Cook the chicken several hours before dinner. Simmer it in a stock pot with salt, pepper and a quartered onion. Bring to boil and then reduce to low. Let simmer for a few hours until chicken begins to fall apart. Turn off broth.

Remove chicken from the broth and de-bone. Place chicken on a plate and cover. Let cool while making the dumplings.

Make dumplings as you would biscuit dough. Mix 2 cups flour (self rising or all purpose, it doesn't matter. If you like puffy dumplings use self rising flour. If you like thin dumplings use all purpose flour) with 2 TBSP shortening and 1 tsp salt if using all-purpose flour. Use a fork to mix completely. Add 1 cup milk until dough is the right consistency. Sometimes you may have to add a little more flour. Flour a clean surface and roll out dumplings. Cut into triangular pieces and add to the broth once it is simmering again.

Add 2 TBSP butter and 1 cup milk to the broth. Cook until dumplings are cooked thoroughly, which should take about 20 minutes.

I hope your family likes it as much as mine does! If you're lazy (like I am some days!) you can use boneless chicken and put chicken broth in the dumplings instead. It increases the cost but it's yummy and quicker.
