How to Make Chicken Manchurian

The Chinese-style batter-fried chicken in sweet and sour gravy was wedded with Pakistani spices, an extra burst of garlic, and soy sauce. Soon the dish was famous all over the city and similarly, many other pseudo-Pak-Chinese recipes were created to meet the Pakistani taste buds with fancy names. A vegetarian version of this dish called cauliflower Manchurian is very famous. Most Manchurian recipes call for ketchup and rely on sugar and vinegar for more flavor. I found using extra ketchup substitutes some of the ingredients and give the same restaurant-style taste with bright red color. To attain this I use velveting, a technique in Chinese cuisine secret. I thinly coat chicken in flour batter and fry it.

Step1

  • Marination: Marinate chicken cubes with all the spices mentioned above for chicken. Leave it for 20 minutes. Combine 4 tbsp of cornflour with 3-4 tbsp of water, mix well and set this aside. After 20 minutes, add cornflour, flour, and egg into the chicken and mix well.

  • Chicken fry: Deep fry chicken pieces for 9-10 minutes on medium flame. Remove and place it on a paper towel to absorb excess oil.

  • Preparation of the Manchurian sauce: In a pan, heat oil and fry chopped garlic for few seconds, add onions, capsicum, vinegar, soy sauce, chili sauce, and oyster sauce. Mix well.

  • Add Chicken in the gravy: Now add in black pepper, white pepper, chicken cube, and sugar. Mix to combine. Then add green onion's white part and ketchup.
  • Add Chicken in the gravy. Add 2 cups of water and bring it to a boil. Then add the cornflour mixture slowly, while keep stirring constantly to avoid lumps. Adjust the thickness of the sauce as you like. 10. At this point check for salt and sugar. Adjust if required.

  • In the end, add fried chicken and mix well. Turn off the flame.

Sprinkle green onions' green part and some sesame seeds. Serve hot with fried rice of your choice and enjoy it.

Tips

  1. Add few drops of water if required for marination.
  2. Don't over-fill your pan during the chicken fry.
  3. Served hot with egg fried rice.

Ingredients

For chicken marination:

  • 400-500 gram chicken boneless, 2 inch, cubed
  • salt to taste
  • ½ teaspoon black pepper
  • ¼ teaspoon white pepper
  • ½ teaspoon soy sauce
  • 1 teaspoon vinegar
  • 1 teaspoon ginger garlic, paste

For chicken coating:

  • 1 egg
  • 4 tablespoons corn flour
  • 1 tablespoon flour

For Manchurian sauce::

  • 2 cloves garlic, chopped
  • 1 teaspoon sugar
  • 1 teaspoon black pepper
  • ¼ teaspoon white pepper
  • 1 teaspoon chili sauce
  • 1 chicken cube or 1 tsp chicken, powder
  • 1 teaspoon vinegar
  • 1 teaspoon soy sauce
  • ½ teaspoon oyster sauce
  • 1- 1 ½ cup ketchup
  • 2 cups water
  • 4 tablespoons corn flour for gravy

Vegetables for Manchurian:

  • 1 small onion, diced
  • 1 small capsicum, diced
  • 4 stems green onion, chopped

For fry:

  • oil for deep / shallow frying
  • 2 tablespoons sesame oil for sauce
