Ingredients

  • 50 GM's Ginger Garlic, Paste
  • 5 Gms Cloves
  • 1 KG Chicken pieces, Curry cuts
  • 500 Gms Onions, Chopped
  • 250 GM's Tomatoes, Chopped
  • 50 Ml Pure Ghee
  • 5 GMs Cinnamon stick
  • 2 GM's Bay leaf
  • 1 Tsp Coriander powder
  • 5 GMs Green cardamon
  • 5 GMs Mace
  • 1 Tea spoon Turmeric powder
  • 7 nos Green chilli, Chopped
  • 5 GMs Star Anise
  • 1 Tsp Red chilli powder
  • 1 Tsp Garam masala
  • 1/2 Fresh coriander, Chopped
  • 200 ml Water
  • As per taste Salt
  • 5 GMs Cumin seeds

Instructions

  1. Take a kadhai or skillet , add Pure ghee let it be hot first, then add all whole spices ( Cumin seeds,cloves,Bayleaf,curry leaf,mace,cinnamon,green cardamon etc. After it starts crackling add Chopped onions saute it till it changes colour and become light brown then add G/G paste and chopped green chilli, saute It for 1 minute.
  2. Now add,chopped tomatoes and saute it untill the tomatoes become messy then add turmeric powder, Red chilli powder,coriander powder and salt as per the taste,saute it till it leaves the oil on the top.
  3. Now, add the curry cut chicken pieces , mix it nicely and check the seasoning . Saute it for 10 - 15 minutes then add some water in the chicken to make a curry consistency and cover the chicken with lid until another 20 minutes in medium flame .
  4. Now, check the chicken , add garam masal powder 1 Tsp and again saute it for 10 minutes ,once the chicken curry is done then remove the chicken from the gas flame.
  5. Now pour the chicken curry in the serving dish and garnish it with fresh green coriander leaf and serve hot with Rice/chapattis or your choice of accompaniments
