Choosing Your Champagne

Champagne cocktails are a true delight adding a little fizz to your life. There are numerous budget sparkling wines that will work wonderfully in your cocktails. While certain Champagnes like Dom Périqnon, Bollinger or even the famous Louis Roederer Cristal (I say famous, because it's a favorite tipple of sorts among celebrities) might break your bank balance, a good old cava, like Poema N.V. Cava Brut will merely deduct 12€ from your balance sheet. However, most supermarkets and wine stores have their own brand of sparkling wines for a fraction of the price. Choose a dry sparkling wine, it works best when mixed with other drinks. Always sample your sparkling wine before serving it to your guests. No it's not an excuse, it's very important that your sparkly is dry and crisp with plenty of lovely bubbles.

Champagne gets it's name from The Champagne region in France where it's exclusively from. Laws world wide restrict the usage of the name Champagne for sparkling wines unless they come from The Champagne region of France or have the legal rights to the use the name. In other words all sparkling wines are sparkling wines but sparkling wines from Champagne in France, are Champagne.

Before I mention any ingredients I must mention serving glasses. Always, always use nice glasses for your cocktails.

Examples shown are; a 4 oz traditional champagne glass, a 6 oz tulip champagne glass and a 6 oz champagne flute. The glasses you serve your Champagne cocktails in, add to the whole ambiance of drinking cocktails; don't spoil that ambiance by serving your cocktails in naff glasses.

Martini glasses are also good for showing off your cocktails. Invest in a good cocktail shaker. Shakers come in different shapes and materials, so choose what suits you. I have a tumble type, because I keep breaking the glass ones...



  • ice cubes
  • 150 ml of orange juice, carton juice is fine, but fresh is best if you have the time
  • 30 ml Grand Marnier
  • 1 egg white
  • 3 splashes of peach bitters
  • chilled Champagne aka sparkling wine to top up
  • cocktail cherries to garnish


Put your ice cubes into your cocktail shaker. Pour in the Grand Marnier, orange juice, egg white and bitters. Shake very well and strain into a champagne flute. Top with bubbly and add the cherries. Then the difficult part; sip to taste. Wonderful.



  • 50 ml of apricot brandy
  • chilled bubbly to top up


Simply pour the brandy into your flute and top up with bubbly.

Bartender's Tip:

I must admit, I make variations of this particular cocktail, using cherry, peach and even straight brandy. They all work very well, so if you have a favorite brandy use that. This is a cool cocktail that takes seconds to make. Just as well, because you'll definitely want another one.

  • 50 ml of Pernod
  • chilled bubbly to top up
  • a slice of lime to decorate


Pour the Pernod into your champagne glass, swirling the Pernod to coat the glass. Slowly pour in the chilled bubbly. The mixture will become cloudy. That's fine it's supposed to. Garnish with a slice of lime.

I personally like a lemon twist, it looks more like the movies and for some reason my drink tastes better.



  • 50 ml of crème de casssis
  • 25 ml of vodka
  • chilled Champagne to top up
  • whole strawberries to garnish


Pour the crème de cassis and the vodka into a champagne flute and top up with chilled Champagne. Drop in your strawberry. The strawberry tastes gorgeous and is a delight to find in the bottom of your glass, when your drink is finished. You might find the need to drop in more than just one.



  • 5 ice cubes
  • 50 ml of brandy
  • 50 ml of sweet vermouth
  • 50 ml of fresh orange juice
  • chilled Champagne to top up
  • orange twist to garnish


Put the ice, brandy, sweet vermouth and fresh orange juice into a mixing glass or your cocktail shaker. Stir to mix together. Strain into a champagne glass and top with chilled bubbly and garnish with an orange twist.



  • 30 ml white rum
  • 30 ml banana liquor
  • splash of Angostura bitters
  • chilled Champagne to top up


Pour the white rum, banana liquor and bitters into a champagne glass. Top with the chilled Champagne and enjoy.

Bartender's Tip:

If you'd like to add a little fruity fun to this cocktail dress it up with some Caribbean fruits. Pineapple and banana slices work very well.

It's time for another great cocktail. La Seine Fizz is a very glamorous drink and certainly looks the part.



  • 25 ml of brandy
  • 15 ml of strawberry liquor
  • 15 ml fresh lemon juice
  • splash of orange bitters
  • 25 ml Grand Marnier
  • strawberries chopped
  • sugar syrup to taste
  • chilled Champagne to top up


Pour the brandy, strawberry liquor, lemon juice, orange bitters and chopped strawberries into your cocktail shaker with the sugar syrup. Shake well and strain into a champagne glass. Top with chilled bubbly and pour over the Grand Marnier. This cocktail looks very impressive and quite the party drink to impress your guests. I am glad to say, the taste lives up to the fancy look. A Tip to Popping Your Cork

When you are popping the cork on a bottle of bubbly, first remove the paper and the wire casing (if there is any).

Slowly ease the cork out, holding the cork firmly between your thumbs. You will feel a slight movement of the cork.

Once you feel the cork give a little, twist the cork as if you are opening a screw cap and gentle ease the cork up and out as you twist.

You will get a lovely popping sound and a little puff of cold air. The most important thing however, is no spillage. After all you don't want to waste good booze.

Tips to remember:

  • Always chose a dry Champagne aka sparkling wine for your cocktails, as most mixers tend to be sweet and you don't want really sweet cocktails.
  • Sample your Champagne choices before using them to make sure your choice is suitable (I enjoy this bit).
  • Your chosen bubbly must always be crisp, dry and of course have lots and lots of gorgeous bubbles, hence the name bubbly.
  • You now have the know how to add a little sparkle to your party. Go forth and enjoy.

Cava is a favorite in my house. Budget priced and delicious. We all pop Champagne from time to time as well, but usually do the cocktails with a decent Cava!
