Cauliflower Pie

This is my go to side dish if I am in a hurry or preparing for packed meals. It's easy to cook and is not messy to put in a lunch box. I also love to make this for a family gathering where I can cut it into portions. Moreover, kids love the taste of this dish which is packed with good-for-you nutrients.


  • 1 medium head cauliflower, finely grated
  • 1 small head chinese lettuce, finely shredded
  • 3 medium eggs, beaten lightly
  • salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon butter


  1. In a bowl, mix all the ingredients.
  2. On a pan, heat the oil and butter.
  3. Add in the cauliflower mixture, forming a circle.
  4. Cook (in low) one side until the mixture is a bit firm and light brown.
  5. Cover to speed up cooking time.
  6. Using another plate, flip the pie and cook the other side until firm.
  7. As needed, add some oil to the pan before flipping to prevent the cauliflower pie from sticking to the pan.
  8. Put the pie on a plate and cool a bit before slicing.

  • cabbage (finely shredded)
  • carrots (minced or grated)
  • regular and sweet potatoes (mashed)
