Cajun Mustard Fried Chicken Strips
Makes 12-16 chicken strips or 1 chicken cut into sections.

Cook time about 45 min
1 bag of chicken tender strips (or 1 chicken cut and prepared)
1 cup mustard (enough to coat the chicken)
1 Tbs chili garlic chalula
1 Tbs Cajun seasoning
1 cup flour
1/2 Tbs garlic powder (more or less to taste)
1/2 Tbs onion powder (more or less to taste)
Oil for frying
Salt and pepper to taste
In a dish combined mustard and Cajun seasoning.
In a separate dish combined your eggs and chalula.
In a 3rd dish combined your flour and remaining seasonings.
In a deep frying pan preheat oil (350 degrees).
Coat your chicken in the mustard mixture, then transfer to flour, coat chicken in flour shake off extra flour and transfer to the egg mixture, then back to flour.
Shake off extra flour and carefully place in preheated oil.
Fry chicken on one side until edges are golden brown then flip chicken over.
Repeat on other side until chicken reaches internal temperature of 165 degrees.
Drain on a rack or paper towels and enjoy with your favorite sides. I recommend baked macaroni and cheese, spinach, and biscuits.

Frying may not be the healthiest way to cook chicken, but it's certainly one of the most delicious. There's just something about a tender, juicy piece of chicken with a crunchy coating.
This chicken has amazing flavor and not to spicy. The mustard is not so much for a strong mustard flavor but more so to make the chicken tender and juicy.You still get a hint of the mustard flavor but its not going to taste like your eating mustard on a hotdog.
I came across this recipe a few years ago and have changed many times over the years until I finally got it just right.
Fried chicken is one of my favorite food to cook because it is so versatile.
I got my love of cooking from my mom.
She was always in the kitchen cooking up something amazing, and one of my favorite memories is being in the kitchen right beside her.
I hope to pass the love of food and cooking on to my girls.
I loved that our house was the house everyone gathered at for all the holidays.
Growing up in Texas gave me a love for tx-mex, good bbq, and that good southern comfort food.
