Broccoli Cheese Soup
In winter, there is nothing I love more than a nice cup of soup and maybe a grilled cheese sandwich for dinner. My favorite soup in the world is from TGI Friday’s restaurant. It is consistently good, and is filling enough as a meal itself or as a side dish for the grilled cheese sandwich or a small salad. I have searched the internet and tried probably a dozen different TGI Friday’s Broccoli Cheese Soup recipes and never found one that was even close to the original. I was given this recipe from a co-worker as just a “regular” broccoli cheese soup recipe and found that it came closer than anything I have ever tried.

Ingredients
4 cups chicken broth
1 cup water
1 cup half & half
4 slices Kraft Cheddar Singles
1/2 cup all-purpose flour
1/2 teaspoon dried minced onion
1/4 teaspoon ground black pepper
4 cups broccoli florets (bite-size)
Topping:
1/2 cup shredded cheddar cheese
2 teaspoons minced fresh parsley
Directions
In a large boiler mix chicken broth,
water, half & half, cheese, flour, onion and Stir well until all lumps of
flour are broken up.
On stovetop, set temperature to a medium heat. Bring soup to a boil, once
boiling, reduce heat to low. Add broccoli and simmer for 15-20 minutes or until
broccoli is tender.
Serve in a soup bowl or cup with shredded cheese and parsley on top.
