Alternative to Fortune Cookies
These cookies are similar to Fortune Cookies in look and taste, however, they have Bible Verses inside of them instead of Fortunes.
They are fun and quite easy to make. The ladies in our church got together and made up 50 of them for our Easter Communion service a couple years ago. They were passed out instead of matza bread and after communion each person read the scripture that was in their cookie.

Bible Verse Cookies Recipe:
1/4 Cup Cake Flour
2 Tablespoons Cooking Oil
2 Tablespoons Sugar
1 Egg White
1 Tablespoon Corn Starch
1 Tablespoon Water
Dash of Salt
8 Typed or Printed Bible Verses
Mix dry ingredients. Add oil and egg white, stir until smooth. Add the water and mix well.
Make cookies one at a time by pouring 1 tablespoon of batter into a lightly greased electric skillet or griddle. Quickly spread out into a circle approx 3-1/2". Cook at 350 degrees for about 4 minutes or until the edges are lightly browned. Turn over with a spatula and cook for 1 minute more.
Working quickly, remove the flat cookie from the skillet and place it on a clean pot holder or napkin. Insert the folded Bible verse, then fold the cookie over once and then over again. Hold for a couple seconds and then set it in an empty cupcake or muffin tin until cool. Cookie should look like a fortune cookie in shape. Makes 8.
