Basic Veggies Soup

Ingredients :
1 Glass cold water
1 medium chopped onion
1 medium leek
1 medium rib celery
1 medium chopped carrot
1/2 medium chopped turnip
1/2 small chopped tomato
3 crushed garlic clove
2 tbsp oil
1 bay leaf
1/2 dries thyme
3-4 fresh parsley stems
3-4 whole black peppercorns
1 whole clove
Salt to taste

Method :
1) Heat the oil in soup pot
2) Add chopped onion, leek, carrot, celery, turnip, tomato and garlic and sauté on low heat for 5 minutes.
3) Cook until the onions are softened and slightly translucent.
4) Add water along with bay leaf, thyme, peppercorns, parsley and clove and boil it.
5) Simmer for 30-45 minutes.
6) Remove from heat, pour through a strainer into another large pot.
7) cool and refrigerate ,if you want to store for later use.
8) This stock may be used to make many other gravies, soups, curries and sauces.
