Turn brown bananas into a vegan dessert.

Vegan baked goods tend to have two problems: they do not rise well and they sometimes have an overly starchy, dry texture. This recipe avoids both problems by replacing the eggs and milk in a typical banana bread recipe with beer.

Dry Ingredients

1.5 c All purpose flour

1 c white sugar

1 t baking powder

.5 t salt

Wet Ingredients

1 bottle beer (The kind and quality matter. I used Red Hook Blonde Ale with great results. One might also use a wheat or weiss beer)

4 T melted margarine

2 ripe bananas, chopped

Combine dry ingredients. Add bananas. Slowly stir in beer and margarine.

Pour into a greased loaf pan (9x5) and bake at 350 degrees for 1 hour. Sprinkle the top with cinnamon and sugar, if you like.

This is a moist bread so you should test it to make sure it is done by sticking a clean knife into it. If the blade comes out clean, it's ready.
