Milk and cream doesn't have to just come just from cows. Nuts, with their creamy nut-meats, offer a nutritious and tasty alternative and they can be used to make healthful nut milks and nut creams.

Many cultures have relied on nuts for the making of nut-based milk and cream for centuries. Until recently, this practice wasn't quite as common in the Western World. Times have changed, though, and with increasing awareness about lactose intolerance and the acidity of milk products, consumers are looking at healthful alternatives. Additionally, because of conditions in factory farms and how milk cows are treated, many consumers are opting to make more compassionate choices and refusing to buy products that may be produced under undesirable conditions.

Markets now offer a selection of nut milks but because these are commercially produced, other undesirable ingredients and sweeteners may be added. Additionally, unless listed on the packaging, it may be difficult to ascertain the actual percentage of nuts used in the product. Imagine buying, for example, almond milk, and that liquid possibly thickened not because of nut content but because of commercial thickeners or flavored with artificial almond flavor, instead of containing much in the way of actual almonds.

When you make your own nut milk or almond cream, you control the ingredients. And you ensure that you are getting real nutrition from actual nuts and not a hoped-for healthful benefit from a laundry list of sketchy ingredients designed to make producers more money, rather than benefiting the consumer.

This article discusses how to make almond cream, a wonderfully tasty concoction that not only offers a healthful alternative to cow's milk, but makes a nutritious topping for hot or cold cereals.

For those with milk allergies, almond cream is a dairy-free alternative. And If you like thick, creamy-tasting toppings for your cereal but don't care for the calories/fats in cow's milk, almond cream just may be the perfect substitute.

Almond cream is also wonderful served over fresh fruit. For a truly healthful breakfast, serve cooked cream of Kamut cereal cereal, topped with fresh fruit and delicious almond cream.

What You'll Need for Almond Cream

To make almond cream, you will need just a few simple ingredients:

  • Blender
  • Ground blanched almonds
  • Water
  • Sweetener (honey, maple syrup, or real vanilla)

It takes just seconds to whip up a batch of almond cream.

  1. Pour 1 cup of purified water into a blender
  2. Add 1-2 tbsp.of sweetener
  3. Add 1/2 cup of ground blanched almonds

This is the basic recipe. If you desire thicker almond cream, simply reduce the amount of water. If you want a thinner mixture, try 1/4 of blanched ground almonds.

For a larger batch of almond cream, double recipe amounts; for a smaller batch halve ingredients.

I've added the video below to provide a visual for those who have never made milk or cream from almonds. This method is slightly different but it will give you a feel for the process.

Why Almonds Are a Healthful Choice for Nut Milk and Cream

Almonds can help to lower cholesterol and as such are heart-friendly. They contain protein, fibre and health-protective plant phytosterols. Rich in the right kind of fats, they are an excellent choice as a cereal topper. Add in calcium and magnesium and other beneficial substances and it's not hard to see why switching to almond cream can be such a good choice to nourish the body.

Yes, using blanched almonds cuts out having to use cheese cloth, which, to me, makes for more work and mess.

Years ago, I discovered that cow's milk gave me eczema, so I looked for milk alternatives. I was thrilled to find that almond milk and cream tasted so good and was so easy to make.

Additionally, eating almonds can be a real health-booster.

Thanks for the recipe. I’ve made almond cream before, although I’ve always used whole almonds. Your suggestion to use blanched almonds is a good one! Almond milk and cream are delicious, and I like the health benefits that you mention. It’s great that people who can’t or don’t want to eat dairy foods have such a healthy milk and cream alternative! I do eat dairy products, but I still love almond milk and cream.
