Scallion pancakes is one of my favorite appetizers. You can buy ready made frozen from Chinese grocery stores or from Hmart. They come 4 to a pack and you can pan fried them in minutes. However, there is nothing better than home made scallion pancakes from scratch. It only takes a few extra minutes to make.
- hot water
- chopped scallion
How To Make Scallion Pancakes
Start with some flour in a large bowl. Mix with hot boiling water and do it slowly and mix the flour using chopsticks. Add the water in small increments and better use less than more. Once the flour is mixed, you can knead it on a flat table with a rolling motion using the palm of your hand.
Place a wet cloth over the dough and let it sit for 30 minutes.
Roll the dough using a rolling pin and make a pie the size of a pizza pie.
Spoon some cooking oil over the dough and completely cover the pie.
Shake some salt all over.
Sprinkle the chopped scallion all over the pie.
Roll up the pie starting with one edge into a tight role.
Cut the roll into 4 sections.
Twist each section and flatten and shape into a small pancake.
Use the rolling pin to flatten a bit more and sprinkle some flour to avoid sticking.
Heat up pan with oil, and fried the pancake till brown on both sides.
Serve hot with dipping sauce made of soy sauce and vinegar.
