  • 1 tablespoon freshly squeezed lemon juice
  • 1 tbsp granulated sugar
  • 1 teaspoon cornstarch
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon kosher salt

In a medium bowl, mix together the rolled oats, flour, brown sugar, ginger, and kosher salt. Stir in the melted butter and mix until well combined. Take 1/2 cup to set the mixture. Press the rest into an 8x8 inch baking pan lined with parchment paper.

Arrange half of the strawberries on top of the crust, topped with cornstarch, lemon juice, and 1/2 teaspoon of granulated sugar. Spread the remaining berries and crumble safely on top.
